Founded in 2008 in Chicago, Koval’s production was immediately characterized by an extreme attention to the territory. The cereals come from organic farms in the Midwest. The distillation method involves a very narrow selection of the heart only to eliminate any possible type of defect possibly present in the head and tail. The small 30 gallon barrels are custom made and charred by a Minnesota manufacturer. The average aging is around two years and they are bottled exclusively as single barrels, without filtration and addition of dyes.

Millet Whiskey is probably Koval’s most original product. The use of millet as the exclusive cereal of a core-range spirit is in fact quite unique. 40% ABV.

TASTING NOTES KOVAL MILLET WHISKET

Nose

it starts with a hint of vanilla, followed by anisette and licorice. The alcoholic note gives way to smoky and meaty nuances. Clean and straight, it’s inviting.

Palate

caramel, licorice toffee, and a distinct sweet taste of pearl millet. The smokiness returns, joined by an interesting saltiness.

Finish

smoky and dry, with a warm finish. Short persistence, but clean and flawless. Encourages you to drink more.

Koval isn’t a newcomer anymore, but still brave. This Millet Whiskey has been on the market since 2015, and has now reached full productive maturity. It’s a unique whiskey, with a straightforward and clean taste, excellent with ice and in cocktails. It offers an interesting variation on the theme of alternative grains.
