The historic grain distillery, closed several years ago and now demolished, has left several traces of its existence through the independent bottlers, that have had access to several barrels with rather important aging. In this case the Italian bottler Valinch & Mallet selected the cask No. 23885 which contained the whiskey from 1987 to 2016.

TASTING NOTES CALEDONIAN 1987/2017 VALINCH & MALLET

Nose: right from the start, there are spicy notes, including black pepper and cinnamon. The alcoholic component is evident but still well integrated. It continues with yellow fruits, banana and peach, followed by saffron and ground coffee.

Palate: there are intense spicy notes, which become more and more pronounced: white pepper, black pepper, saffron and then yellow fruits (apricot, peach and banana). There are also hints of ginger towards the end.

Finale: of long persistence. Black pepper and ginger are perceptible, joined by yellow fruits, cocoa and the omnipresent spicy component.

The intensity is excellent and the aromatic palette is marked by a spicy component that is able to harmonize well with the rest of the bouquet. Complexity is above average.
