TASTING NOTES SAINT JAMES XO
Nose: the alcoholic impact decreases after a few moments. It then turns to spices, white pepper and cinnamon in particular. Lastly, green tea and acacia honey are perceptible as well.
Palate: excessively sweet, followed by a particular spicy note, composed of a mix of white pepper, cinnamon, cardamom and tea. Rosemary joins the profile. It then continues with milk chocolate and ripe yellow fruits. Intensity increases. It is very round.
Finish: intense, with a medium-long persistence. There are spices, yellow fruits, black pepper and cinnamon present.
The barrels were well chosen.
